Mushroom Bagel

Ingredients

  • 150g closed-cup mushrooms, sliced
  • 4 bagels, sliced horizontally
  • 2 tsp wholegrain mustard
  • 4 rashers of bacon
  • 100g cheddar cheese, grated

Method

  1. Melt a knob of butter in a large frying pan. Saute the mushrooms, coating them in the butter and cooking over a high heat for 5 minutes until golden brown and the moisture has evaporated. Stir in the cheese until melted.
  2. Meanwhile, grill the bacon and toast the bagels. Spread a little mustard onto the bottom half of each bagel. 
  3. To serve, place a rasher of bacon on each bagel, spoon over the cheesy mushroom and top with the other bagel half.
