Toasted Ciabatta Mushrooms

Ingredients

  • 225g closed-cup mushrooms, quartered
  • 120g mixed oyster mushrooms, torn
  • 1 tbsp olive oil
  • 25g butter
  • 2 slices of ciabatta bread
  • 125g ricotta cheese
  • 1 tbsp chopped flat-leaved parsley
  • ½  tsp balsamic vinegar

Method

  1. Heat the oil and butter in a large pan, add the mushrooms and stir fry until golden brown and the moisture has evaporated.
  2. Meanwhile toast the ciabatta. Spread the ricotta cheese over ciabatta.
  3. Stir the parsley and balsamic vinegar into mushrooms. 
  4. Place a piece of ciabatta onto each plate and top with the mushrooms mix.
